Salmon + Asparagus

IMG_0098I’m not going to lie to you…I am afraid of cooking fish. The boy was responsible for that beauty on the plate, BUT I did the asparagus.

So let me tell you about the asparagus, because I have turned non-asparagus eaters into asparagus-lovers with this super-easy-it’s-not-even-a-recipe.  The secret is olive oil and shredded Parmesan…nom nom nom. Now everytime I make it I use a little less olive oil and no one even notices because they remember how decadent it was the first time.


Cut asparagus, wash, dry off, mix with t tablespoon of olive, oil, salt&pepper, line up on baking sheet and place in 350 degree oven for 10 minutes, take out and put on shredded cheese then bake for another 10 and you now you will have asparagus lovers in the house!

{Fancy} Cobb Salad


IMG_0016The boy’s specialty…cobb salad! Placing the food in a stripe-like fashion over the bed of lettuce gives it the {fancy} look…and it’s delicious! Lean protein (chicken, eggs), healthy fats (avocado) and veggies make this is a very satisfying and balanced meal…just skip the bacon and go easy on the blue cheese 😉
